Almost anyone who has worked in the restaurant industry has at some point done a "catering gig". Most of the time it involves loading overflowing trays of food into the back of some van along with tables, chairs, carving boards, warming lamps and much, much more.
You drive to your catering event carefully, obeying all traffic laws and then, "IT" happens. You press the brake pedal a little too hard at a red light and WHAM! Everything shifts in the back of the van and you cringe at the thought of what you've just done. The end result? If you're lucky, you arrive at your end destination with about 90% of the food you started out with being still edible, and not splattered about all over the place.
